Kaju Katli or Kaju Barfi is definitely the most delightful part of Diwali celebrations! It is made with just 3 ingredients with Cashews, Sugar and Ghee (Clarified Butter). This is simple and easy to prepare at home and if consumed moderately then its healthy too as Cashews contain rich in Protein and help in fighting high blood pressure.
INGREDIENTS
Kaju (Cashew Nuts) – 2 Cup/500 gm
Sugar – 1 Cup/250 gm
Water – 1 Cup/250 ml
Ghee – 2 tbsp/30 gm
METHOD
Grind Kaju slowly with a pause in every 3 seconds, otherwise Kaju will start releasing oil.
Strain the Kaju Powder to remove any Big Pieces.
Make a Sugar Syrup (7-8 minutes on medium flame), 1-2 strings syrup is not required here otherwise Barfi will be hard.
Add Kaju Powder in the Sugar Syrup. Continuous stirring is required, it should be done in approximately 10 minutes.
Transfer it to a greasy bowl, Add Ghee and mix it well.
Place it on a greased butter paper and place another butter paper top of it and roll it with the help of rolling pin.
Once it becomes flat, it should not be too thick and too thin then place couple of Chandi ka vark sheets on top of it. Cut it with the help of sharp Knife to give diamond shape.
Cool it for 30 minutes before separating the Barfi pieces.
