Banana Bread Custard Cheesecake | Cream Cheese Banana Cake | Banana Cheesecake

Banana Bread Custard Cheesecake; moist and fluffy banana cake covered in creamy cheesecake vanilla custard frosting! The very best way to use up overripe bananas this bread is tender and packed with full of flavor! The base of this cake is made out of crushed crackers (biscuits), then layered with spongy banana & walnut bread, and then with cheesecake infused with delicious vanilla custard.


INGREDIENTS

Banana Bread


Butter – 80 gm

White Sugar – ½ Cup/110 gm

Raw Egg – 2 Nos

All Purpose Flour – 1 Cup/135 gm

Baking Soda – 1 tsp/ 5 gm

Salt – ½ tsp /2.5 gm

Vanilla Extract – 1 tsp/5 gm

Walnut (Coarsely Chopped Walnut) – ½ Cup/50 gm


Custard:

Milk – 600 ml

Sugar – 150 gm

Custard Powder - 4 tbsp/40 gm

Milk - 200 ml


Cheese Cake:

Crust:

Digestive Biscuits – 90 gm

Butter – 60 gm


Cheese Cake


Cream Cheese – 200 gm

Sugar – 30 gm

Lemon Juice – 1 tbsp/15 ml

Gelatin – 5 gm

Milk – 30 ml

Fresh Cream – 200 ml

Sugar – 20 gm

Gelatin – 2 gm

Milk – 30 ml


METHOD


Banana Bread:

  • Grease 7 Inch Cake Pan with Butter and Line with Parchment Paper.

  • In a Bowl add Butter (Room Temperature), White Sugar.

  • Whisk on Medium to High Speed using hand mixture.

  • In a Separate Bowl add Banana and Mash it well then add it to the Sugar and Butter Mixture.

  • Add Raw Eggs and Whisk again.

  • Sieve All Purpose Flour, Salt, Baking Soda together then add it to the above prepared Banana Mixture.

  • Add Vanilla Extract and Chopped Walnuts then transfer into Greased Pan.

  • Tap multiple times to remove any air pockets.

  • Bake at 350 F (Pre heated Oven for 50-60) Minutes.

  • Cover with Damp Cloth and Cool it to Room Temperature.

  • Take half for the Cheese Cake.

Custard:

  • Boil Milk and Sugar.

  • In a separate bowl add Custard Powder, Milk, mix well and then add it to the Boiling Milk.

  • Once Custard start thickening, switch-off the flame and bring it to Room Temperature.

Cheese Cake:

  • Place Digestive Biscuits in a Plastic bag and Crush into a Powder.

  • Transfer into a Bowl, add Butter and pour into 7 Inch Baking Pan.

  • Press hard to set the Crust and keep it in the Fridge for 20 Minutes.

  • In a Bowl add Cream Cheese (Room Temperature), Sugar and mix well.

  • Add Lemon Juice and mix again.

  • In a separate Bowl add 5 gm Gelatin in 30 ml Milk and place on top of separate hot water Bowl to mix the Gelatin well in the Milk.

  • Then add the Gelatin Mixture into the Cream Cheese Mixture.

  • In a separate Bowl add Fresh Cream, Sugar and Whisk using Hand Mixture.

  • Add whipped Cream to Cream Cheese Mixture.

  • Add half of the prepared Custard and then Mix everything together.

Assemble:

  • Now takeout the Baking Pan from Fridge and place half Banana Bread and Pour Cheese Cake mixture.

  • Keep it in the Freezer for 20 Minutes.

  • In a separate Bowl add 5 gm Gelatin in 30 ml Milk and place on top of separate hot water Bowl to mix the Gelatin well in the Milk and add it to the remaining Custard.

  • Takeout the Cheesecake from Freezer and pour the above prepared Custard mixture on Cheese Cake.

  • Keep it in the Refrigerator for 4 hours.

  • Banana Bread Custard Cheesecake is ready!
