Kadai Paneer – Kadai means wok and paneer is Indian cottage cheese. This curry is origin from the Northern part of India. The Paneer (Indian cottage cheese), Onions, bell peppers cooked in a spicy masala. Kadai Paneer gets its distinct flavor from freshly ground spices like coriander seeds, cinnamon, black pepper, cloves, and red chilies!
INGREDIENTS
For Kadai Masala Coriander Seeds – 1 tbsp/15 gm Cumin Seeds – 1 tbsp/15 gm Dry Red Chilli – 2-3 Nos. Black Peppercorn – 1 tbsp/15 gm Cloves – 4-5 Nos. Cinnamon – ½ Inch For Gravy Oil – 2 tbsp/30 ml Cumin Seeds (Jeera) – 1 tsp/5 gm Onion (Chopped) – 2 Medium Ginger Garlic Paste – 1 tbsp/15 gm Turmeric Powder – ½ tsp/2.5 gm Kashmiri Chilli Powder – 1 tsp/5 gm Chilli Powder – ½ tsp/2.5 gm Coriander Powder – 1 tsp/5 gm Garam Masala – 1 tsp/5 gm Tomato Puree – 1 Cup/2 Tomatoes Salt - As per taste Fresh Cream - 2 tbsp/30 ml For Vegetables Saute
Oil – 1 tbsp/15 ml
Cubed Onion – 1 Medium
Cubed Capsicum – ½ Cup
Cubed Paneer - 250 gm
Salt – ½ tsp/2.5 gm
Chilli Powder – ½ tsp/2.5 gm
Kadai Masala – 1 tbsp/15 gm
METHOD
For Kadai Masala
In a pan, dry roast Coriander Seeds, Cumin Seeds, Dry Red Chilli, Black Peppercorn, Cloves and Cinnamon.
Roast for 2-3 minutes on medium flame and then grind it coarsely.
For Gravy
In a Kadai, heat Oil then add Jeera and Chopped Onion.
Once Onion turned brown, add Ginger Garlic Paste, Turmeric Powder, Kashmiri Chilli Powder, Red Chilli Powder, Coriander Powder, Garam Masala and then roast for 2 minutes on medium flame.
Add tomato Puree and cook until Oil start releasing (Approx. in 6-7 minutes), add Salt in between and stir occasionally.
Add fresh Cream and cook for 2 minutes, then add water and cook further for couple of minutes.
In the meanwhile, heat Oil in a separate Pan, add Cubed Onion, Cubed Capsicum and Cubed Paneer. Saute for 5 minutes with a pinch of Salt, Chilli Powder and prepared Khadi Masala.
Finally add Sauted vegetables to the gravy and add some more Kadai Masala.
Cook for 2 minutes more and garnish with Julian Ginger and Chopped Coriander Leaves.
