10 Minutes Quick Rice Recipe for Lunch/Dinner

Today, we have prepared 2 types of Rice which are made in 10 mins, both are extremely popular in South India. You can make it either for Lunch or Dinner. Coconut Rice - Coconut rice is usually made from basmati rice with coconut flavors acquired by grated coconut. Prepare this wonderful Coconut mixture by mixing black pepper, nuts, curry leaves, and other spices. Finally, mix this rice with ghee for an aromatic ecstasy. Lemon Rice: Lemon rice is the quick recipe you’ve been looking for! If you have leftover rice, then lemon rice is a one-step recipe. A simple yet flavourful recipe by mixing cooked white rice with lemon juice, chilies turmeric, and nuts.


INGREDIENTS

Coconut Rice

Oil -2 tbsp/30 ml

Mustard seeds - 1 tsp/5 gm

Jeera/ cumin seed - ½ tsp/2.5 gm

Urad Daal - 1 tbsp/15 gm

Channa daal - 1 tbsp/15 gm

Black Pepper corn - 2 tsp/10 gm

Curry Patta - Handful

Hing - ½ tsp/2.5 gm

Salt - As per taste

Green Chillies (Chopped) - 2 Nos

Ginger (Chopped) - 1 inch

Cashew Nuts - ½ Cup

Coconut (Grated) - 1 cup

Boiled rice - 1 cup rice (Before boiled)

Desi Ghee - 1 tbsp/15 gm

Fresh Coconut - ½ Cup


METHOD:

Coconut Rice:

  • In a Pan add Oil, Mustard Seeds, Cumin Seeds, Split Black Lentils, Split Chickpeas, Black Peppercorns and fry for 2 Minutes.

  • Add Asafoetida, Cashew Nuts, fry till brownish.

  • Add Slitted Green Chillies, Chopped Green Chillies, Chopped Ginger, Curry Leaves and Salt, Mix Well.

  • Add Grated Coconut and saute for 2 minutes, then add Boiled/Cooked Rice and mix well.

  • Add Clarified Butter, add ½ cup of Grated Coconut and mix well.

Lemon Rice

Sesame Oil - 2 tbsp/30 ml

Mustard Seeds - 1 tsp/5 gm

Urad Daal - 1 tbsp/15 gm Channa Daal - 1 tbsp/15 gm

Red Chillies whole - 2-3 Nos

Hing - ½ tsp/2.5 gm

Curry Patta - Handful

Green Chillies (Chopped) - 2 Nos

Peanuts - ¼ Cups

Cashew Nuts - ¼ Cup

Turmeric - 1 tsp/5 gm

Salt - As per Taste

Add Lemon Juice


METHOD:

Lemon Rice:

  • In a Pan add Sesame Oil, Mustard Seeds, Whole Red Chillies, Split Black Lentils, Split Chickpeas and fry for 2 Minutes.

  • Add Peanuts, Cashew Nuts, Asafoetida, Chopped Green Chillies, Curry Leaves, Turmeric Powder, Salt and Mix well.

  • In a separate bowl, add Boiled/Cooked Rice and above mixture, mix everything together and squeeze some lemon into it.

  • Check for Seasoning, if needed add more salt.
