Handi Chicken: It is one of the medium spicy chicken dishes which is popular in North India. It's a traditional dish cooked in a handi (a cooking pot with a lid) with a creamy sauce which gives a unique flavor to the Chicken. This Handi Chicken made with yogurt, cream and species is fairly easy to prepare and makes a perfect weeknight meal and can be made in under just 30 minutes.
INGREDIENT
Oil – 2 tbsp/30 ml
Ginger Garlic Paste – 2 tbsp/30 ml
Add Chicken (Boneless) – 500 gm
Oil – 2 tbsp/30 ml
Cumin Seed – 1 tsp/2.5 gm
Onion (Pyaaj) – 2 medium (Finely chopped)
Tomato Puree – ½ Cup / 100 gm
Turmeric Powder (Haldi powder) – ½ tsp/2.5 gm
Chilli Powder – ½ tsp/2.5 gm
Kashmiri Chilli Powder - 1 tsp/5 gm
Coriander Powder (Dhaniya Powder)– 1 tsp/5 gm
Yogurt – 2 tbsp/30 gm
Add Water – 30 – 40 ml
Pepper Powder – 1 tsp/5 gm
Salt – As per taste
Garam Masala - 1 tsp/5 gm
Kasturi Methi - 1 tsp/5 gm
Cook - 2- 3 mints
Fresh Cream - 3 tbsp/45 ml
Water - 4-5 tbsp/30-40 ml
Green Chillis - 2-3 Nos

METHOD
In a Pan add Oil, Ginger Garlic Paste, Boneless Chicken, Salt and fry 3-4 Minutes on high heat and keep it aside.
Add Oil, Cumin Seeds, Finely Chopped Onion in a Pan and saute for 5-6 minutes on medium to high flame.
Add Tomato Puree, Turmeric Powder, Chilli Powder, Kashmiri Chilli Powder, Coriander Powder and sauté for 2 Minutes.
Add Chicken and Fry for 4 minutes on high flame.
Add Yogurt, Water the cover and cook for 10 Minutes on medium flame.
Stir in between.
Add Pepper Powder, Garam Masala, Fenugreek Leaves Powder and cook for 2-3 Minutes.
Add Fresh Cream then Cover and simmer for 2 Minutes.
Check for Salt, if required then add more Salt.
Add Julian Ginger, Green Chillies and Coriander Leaves.
