Christmas Special Plum Cake

We made this our childhood delight Christmas Plum cake made with dried fruits like apricot, raisins, prunes, cherries, and most importantly our favourite tutty fruiti! We infused with some spices like cinnamon, nutmeg, cloves, which gives distant perfection of taste! Most people prefer adding rum or brandy infused dried fruits in the cake while we made it without any alcohol and eggs.


INGREDIENTS

Sugar – 200 gm Warm Water – 200 ml Butter – 115 gm Black Raisin – 50 gm Prunes – 100 gm Golden Raisin – 50 gm Cranberries – 100 gm Dry Apricot – 50 gm Cherries – 50 gm Walnuts – 50 gm Cashew Nuts – 50 gm Tutti Frutti – 60 gm Milk – 200 ml Refined Flour – 230 gm Powdered Sugar – 50 gm Salt – ½ tsp/2.5 gm Cinnamon Powder – 1 tsp/5 gm Nutmeg Powder – 1 tsp/5 gm Clove Powder – 1 tsp/5 gm Baking Powder – 1 tsp/5 gm Baking Soda - ½ tsp/2.5 gm Orange Zest – 1 tbsp/15 gm Vanilla – 1 tbsp/15 gm Cashew Nuts and Prunes for decoration


METHOD

  • In a Pan add Sugar and caramelize it with continuous stirring on medium flame.

  • When Sugar start boiling add warm Water gradually, then add Butter and Dry Fruits, and bring it to boil.

  • Bring the soaked dry fruit to room temperature.

  • Grease a 7 inch baking pan with Butter and lining it with Butter Paper.

  • Pre heat the oven at 350ºF.

  • In a large bowl, add milk and Sift Flour, Powdered Sugar, Baking Soda, Baking Powder, Salt and all the dry Spices.

  • Then add Orange Zest and Vanilla Essence.

  • Mix everything together using cut and fold method.

  • Pour the cake mixture into the prepared cake pan and bake for 90 minutes in pre heated oven.

  • Insert a toothpick in the cake, it should come out clean otherwise bake for 5 minutes more.

  • After taking out the cake from Oven, keep it aside to cool and make sure to cover it with Damp Cloth.

  • After cake is at room temperature, demold it from cake pan.

  • Cut the cake and enjoy your Christmas. Merry Christmas!!!
