We have created a Chicken & Shrimp Coconut Curry recipe which is very easy to make and can be done in just 15 minutes. Coconut curries are very famous in Southern part of India and South Indian fish, chicken or meat curries are given a whole new dimension by adding rich creamy coconut milk.
INGREDIENTS
Oil - 4 tbsp Whole Red Chilli - 2-3 Nos. Onion (Chopped) - 1 medium Ginger Garlic Paste - 1 tbsp/15 gm Chicken (Strips) – 200 gm Shrimps/Prawns - 150 gm (15 pieces) Tomato paste - 1 cup (1 tomato) Turmeric - ½ tsp/2.5 gm Kashmiri Red Chilli Powder - 1 tbsp/15 gm Coriander Powder - 1 tsp/5 gm Garam Masala - 1 tbsp/ 15 gm Salt – As per taste Coconut milk - 200 ml Onion - 1 medium Green Pepper - ½ Cup Yellow Pepper - ½ Cup Green Chilli – 2 Nos. Lemon juice - 1 tbsp/15 gm
METHOD
Heat Oil in a Pan and add Whole Red Chilli, Chopped Onion, fry till brownish.
Add Ginger Garlic Paste and mix well.
Add Chicken (Strips), Shrimps/Pawns, stir and fry well.
Add Tomato Paste, cover and cook for 3 minutes on medium flame.
Add Turmeric Powder, Kashmiri Red Chilli powder, Coriander Powder, Garam Masala and Salt.
Add Coconut Milk, cover and cook till Oil start separating.
Add onion, Green Pepper, Yellow Bell Pepper, Green Chilli.
Cover and cook for 2 minutes on medium flame, make sure Veggies should remain Crunchy.
Switch-off the flame and add Lemon Juice.
