Achari Chicken is tandoori or tikka recipe in which Chicken is cooked with Achari Masala. “Achaar” is an Hindi term which means pickle. We have marinated Chicken drumsticks in Achari masala, Mustard Oil, yogurt, and other spices and grilled in pan to juicy perfection. Achari marination is consist of more Mustard Oil and less yogurt unlike any other tikka sauce wherein more yogurt required and less Oil. This is very flavourful and one of the favourites in Indian cuisine.
INGREDIENTS
Jeera (Cumin Seeds) – 1 tsp/5 gm Methi Dana (Fenugreek Seeds) - 1 tsp/5 gm Kalonji (Black Cumin) – ½ tsp/2.5 gm Saunf (Fennel Seeds) - 2 tsp/10 gm Sarso Dana (Mustard Seeds) - 1tsp/5 gm Hung Curd (Dahi) - ½ Cup/125 gm Ginger Garlic Paste - 2 tbsp/ 30 gm Mustard Oil - 2 tbps/ 30 ml Lemon Juice - 1 tbsp/15 ml Vinegar - 2 tbsp/15 ml Haldi (Turmeric Powder) - 1tsp/ 5 gm Lal Mirch (Red Chilli Powder) - 1 tsp/5 gm Kashmiri Chilli Powder) - 1 tsp/5 gm Garam Masala - 1 tsp/5 gm Amchur (Mango Powder) - 1 tsp/5 gm Salt - As per taste
METHOD
Slit each side of Chicken Drumsticks to add more flavor.
For Achari Tikka Masala, Saute Cumin Seeds, Fenugreek Seeds, Black Cumin, Fennel Seeds, Mustard Seeds on low flame until fragrant and then grind coarsely.
For Marination, take medium size Bowl and add Hung Curd, Mustard Oil, Lemon Juice, Vinegar, prepared Achari Tikka Masala, Turmeric Powder, Red Chilli Powder, Kashmiri Chilli Powder, Garam Masala, Mango Powder, Salt and mix well.
Add Chicken in the above prepared Marination sauce and refrigerate for 30 Minutes.
Pre heat the Pan and apply some Mustard oil.
Arrange the Chicken Drumsticks in Skewers carefully.
If you are using bamboo/wooden Skewers, soak it into water for 15 minutes to avoid burning
Once 90% cooked apply the remaining Marinated Sauce and cook for 2 minutes further.
