Dahi Wali Lauki (Yogurt Based Bottle Gourd) is a healthy curry - low in fat and cholesterol; it is rich in dietary fiber and its high water content makes it have a cooling effect. It is super easy to make and this spicy and tangy curry goes well with Roti/Paratha/Rice. There are different ways one can make it but this Dahi wali Lauki (Yogurt Based Bottle Gourd) is extremely delicious and tasty.
INGREDIENTS
Oil – 1 tbsp/15 ml
Cumin Seeds - 1 tsp/5 gm
Fenugreek Seeds – ¼ tsp/1.25 gm
Green Chilli Slit – 2 Nos
Bottle Ground – Medium Size/2 Cups
Salt – As per taste
Turmeric Powder – ½ tsp/2.5 gm
Red Chilli Powder – ½ tsp/2.5 gm
Dahi (Yogurt/Curd) – ½ Cup /125 gm
Coriander Powder – 2 tsp /10 gm
Kashmiri Chilli Powder – 1 tsp/5 gm
Dry Mango Powder – 1 tsp /5 gm
Coriander Leaves – Handful
METHOD
In a Pan, heat Oil and add Cumin Seeds, Fenugreek Seeds, Green Chilli Slit and Bottle Ground.
Saute for 2 minutes and then add Salt, Turmeric Powder, Red Chilli Powder and mix well.
Cover and cook for 5 minutes, make sure Lauki should not be over cooked.
Switch-off the flame and bring the curry to room temperature before next step.
In a separate bowl take Yogurt/Curd and then add Coriander Powder, Kashmiri Chilli Powder, Dry Mango Powder, mix well and add it to the curry.
Cook further for 2 minutes and garnish with Coriander leaves.
