2 immensely important Chutney for Indian Chaat. Green Chutney is made of Coriander and Mint and Red Chutney made of Imli and Sugar.
We make chaats all the time, as we are extremely “Chatore” 😊 These home made chaat chutneys sweet tamarind chutney & cilantro-mint chutney will definitely come in handy every time :)
INGREDIENTS
Pudhina Chutney / Mint & Coriander Chutney
Mint Leaves - ½ Cup
Coriander Leaves - 2 Cup
Green Chillies - 3 Nos
Lemon Juice - 1 tbsp / 15 ml
Curd ½ Cup
Salt – As per taste
Black Salt - 1 tsp / 5 gm
Grind Well and Make it in a paste.
Meethi Imli ki Chutney / Sweet Tamarind Chutney
Tamarind Water
Sugar - 250 gm
Kashmiri Chilli Powder - 2 tsp / 10 gm
Roasted Jeera Powder - 1 tsp / 5 gm
Fennel Powder - 1 tsp / 5 gm
Ginger Powder - 1 tsp / 5 gm
Garam Masala - 1 tsp / 5 gm
Black Salt - 1 tsp / 5 gm
Salt - As per taste
Raisins - 1 tbsp/15 gm
Melon Seeds - 1 tbsp/15 gm
Boil till the consistency becomes flowing.
METHOD
Keep Tamarind soaked in 3 cups of hot water for 30 minutes in a bowl
Take clean pan and Strain the soaked Tamarind into the pan
As it become hot, add sugar and stir it properly
Add Kashmiri chilli, Fennel Powder, Roasted Jeera Powder, Ginger Powder, Garam Masala, Black Salt & Salt as per taste
Mix all of them very well and bring it to boil
Stir it in between
Check and make sure it should be one string consistency
Add melon seeds
Now switch off the flame and let it cool for sometime
